1958年4月12日,毛澤東主席在黃克誠(chéng)將軍和時(shí)任湖南省省委書(shū)記周小舟的陪同下,神采奕奕地邁著健步來(lái)到火宮殿飲食店視察。時(shí)任火宮殿公方經(jīng)理何炳炎把毛主席迎接到二樓雅座。在擺臺(tái)時(shí),毛主席起身以一個(gè)普通勞動(dòng)者的身份同何炳炎一道鋪好桌布。然后,毛主席問(wèn)何:“火宮殿的老人還在不在?生活過(guò)得好不好?長(zhǎng)沙的米多少錢(qián)一斤?”何炳炎向主席一一作了匯報(bào)。在點(diǎn)菜時(shí),非常熟悉火宮殿的毛主席笑著說(shuō):“吃點(diǎn)家??谖?,來(lái)點(diǎn)臭豆腐,東安仔雞……就可以了。”廚房師傅聽(tīng)說(shuō)是給毛主席炒菜,個(gè)個(gè)心中又驚又喜,都想拿出看家本領(lǐng)來(lái),一定要把飯菜做得合主席口味。當(dāng)端上外焦內(nèi)嫩的臭豆腐時(shí),毛主席邊吃邊說(shuō):“火宮殿的臭豆腐,聞起來(lái)臭,吃起來(lái)香。”主席在火宮殿吃得很高興。臨走時(shí)對(duì)何炳炎說(shuō):“火宮殿的小吃、湘菜很著名,你們應(yīng)該保持它的特點(diǎn),火宮殿是廣大群眾喜愛(ài)來(lái)的地方,你們還要把它搞得更好。”
火宮殿此次推出主席宴,是火宮殿總經(jīng)理譚飛先生帶領(lǐng)全體火宮殿人,通過(guò)研究史料,走訪曾經(jīng)為主席服務(wù)的湘菜大廚們,并反復(fù)研究,多次摸索最終成型。是以偉大領(lǐng)袖毛主席視察火宮殿時(shí)所品嘗的火宮殿美食為基準(zhǔn),結(jié)合毛澤東青年時(shí)代在火宮殿吃過(guò)的小吃,以及主席喜愛(ài)的湘菜,組成一席。有六冷碟、十大菜、兩隨菜、四點(diǎn)心。有的清鮮淡雅,有的色香味濃,都是原汁原味的湘菜、湘點(diǎn)。經(jīng)火宮殿的湘菜大師們精烹細(xì)調(diào),可讓您在一桌宴席中品味湖湘飲食文化、感悟偉人情懷。
On April 12th, 1958, Chairman Mao, accompanied by General Huang Kecheng and Zhou Xiaozhou, secretary of Hunan provincial party committee, visited Huogongdian. He Bingyan, public relations manager then, greeted them to a private room in the second floor. Chairman Mao, as an ordinary worker, set the table with He Bingyan. Then, Chairman Mao asked: “Are the old staffs still here? How are their lives? How much is the rice in Changsha? ” He Bingyan answered his questions one by one. Chairman Mao was very familiar with food in Huogogndian, so he ordered with smile: “Just have some home style dishes such as stinky tofu and Dong’an Chicken.” Hearing that Chairman Mao was today’s guest, chefs were so nervous and surprising that they all tried their bests to satisfy Chairman Mao. Stinky tofu in Huogongdian is crispy outside and melting tender inside. When eating it, Chairman Mao praised: “Stinky tofu here smells bad but tastes good.” After a nice dinner in Huogongdian, Chairman Mao said to He Bingyan when he was going to leave: “Hunan dishes and snacks in Huogongdian are very famous and people like Huogogndian, so you should make it better. ”
Made by Tan Fei, general manager of Huogongdian, accompanied with all staffs, banquet of Chairman Mao is formed through researching a lot of historical materials, visiting chef who had ever served for Chairman Mao and testing for many times. Based on the dishes that Chairman Mao ordered when he visited Huogongdian, combined with snacks that Chairman Mao has ever had in his youth and his favorite Hunan Dishes, the banquet of Chairman Mao includes six cold dishes, ten main courses, two side dishes, and four desserts. After elaborately cooked by chef in Huogongdian, all dishes are authentic Hunan cuisine, some of which are light and refreshing and others are fragrant and luxurious. You can taste Hunan catering culture and commemorate Chairman Mao in the banquet.
